I was looking for something a little “out of the box” for our thanksgiving feast and came across a Pumpkin lasagna recipe. This is great for anytime of year as you can do it with any type of squash puree. The original recipe that I came across recommended canned pumpkin, but since they didn’t have that at the farmers market…I opted to use some other squash. The original recipe also just had parmesan cheese, so I opted to mix in another recipe that called for ricotta and fontina. The truth is, as long as you have the basic idea, mixing and matching is a lot of fun! Spruce it up to suit your taste or to fit what you have available! Anyway, here’s what I did!
